What I Ate Wednesday: Week 1
Something new on the blog, What I Ate Wednesday, better known as WIAW.

On Monday The Cowboy and I decided to go for a run instead of heading to spin class. I have a bit of a love-hate relationship with spinning. I LOVE the calorie burn but I HATE that I MUST get there 35 minutes before the class starts in order to get a pass. So a run it was.
As a result, I was rungry all day on Tuesday – and I only ran 4k!
Started off the morning a bit early with a cup of Detox tea before getting ready for the day
Upon arriving at work I had a cup of 0% plain greek yogurt topped with a bit of jam and granola
And a grande Veranda coffee to get the juices flowing.
I’m trying to get back in the habit of eating breakfast and having coffee at home before coming into work. I’m starting slowly, waking up and having tea, but hope to be back to eating at home soon – it’s better for the bank account!
Lunch was Pioneer Woman white chicken enchiladas – I’ll be posting the recipe after I’ve had a chance to make a few tweaks to make it healthier and a bit spicier
Chased with a piece of gum. I desperately wanted a Coke Zero, but decided to try the gum first and, it worked!
Afternoon snacks were some green grapes…
After all that food, I was still rungry but refrained because I didn’t want to have a fully tummy before heading to the gym.
Tuesday’s are a bit tricky because my gym class doesn’t start until 7pm, so I don’t eat dinner until after 8pm – I do my best to balance not being hungry before going to the gym and eating too much before going to the gym. It’s tough!
I was STARVING as I headed out the door to the gym, I had a scoop of PB on my way out the door and didn’t get a chance to take a picture of it. PB has always been my “go to” if I’m starving and need something to hold me over for a bit.
Dinner was late this evening, but I had time to pre-cook the rice and slice the veggies before heading out the door.
Zucchini and mushrooms, wild rice with hummus, bison sausage with mustard and a pickle. SO YUMMY.
After dinner it was time to rehydrate with some sparkling water from the Soda Stream and a tea for dessert (grumble, grumble)
Tea for dessert may not be my first choice, but it’s a decent enough option when I was something a little sweet.

Kitty LoveFrom a brief look at the numbers I need to cut back a bit on the fat – I know this is mainly a result of my lunches, so a healthier version is certainly in order!
