Breakfast: Overnight Oats
I think I finally may have solved the issue of my tummy troubles.
Protein.
I ate a veggie sub for dinner last night and my tummy was FINALLY okay.
It was so nice to not be curled up on the couch in pain!
Because my tummy was so bad yesterday I ended up skipping out on the veggie dinner, but I think we’re going next week after running. Speaking of running, would you believe it’s been a week since I ran last?! Ugh. Not good. Especially since I have a half on September 11 and another one on October 9. Must. Start. Running.
I realize I’m a bit late to the overnight oats party, but I had a desire to make them last night, so I popped into the grocery store and picked up some instant oats. They did not disappoint.

Here’s what you need: instant oats, milk and yogurt (plus whatever toppings you desire!)
The basic recipe (per KERF) is equal parts oats, milk and yogurt. The yogurt I was using was 210 calories per half cup (!!) (I did a poor job at reading the label when I bought it, I thought it said 210 calories per cup!) so I only wanted to use a 1/4 cup max, so I added a bit more milk.
Half a cup of oats into the container:
Followed by half a cup of vanilla almond milk and a dollop of yogurt (I’m guessing it was roughly 1/4 cup). Give it a stir.
Now doesn’t that look appetizing?!
Okay, maybe not. Once it’s all mixed pop it in the fridge to chill out over night. (Fridge. Chill. Get it?!)
In the morning decide on your toppings, I went with half a banana
a sprinkling of flax seeds and some all natural almond butter.
I wasn’t too sure what to expect, but guys, it was awesome! I love it! And soooo filling. I ate half at home before heading to work and then ate the other half as a mid-morning snack.
It’s not too terrible calorie-wise, either, approximately 400 calories, but this filled me up for breakfast and a mid-morning snack!
A second cousin of mine from Germany is flying int today, so expect some more touristy and foodie posts this week. I’m working on the header (The Cowboy said today, we’ll see…..) and getting my Winnipeg pictures up, I just haven’t had any time at all! Craziness!
